Hello everyone!
Today I am going to share with you Erik's favorite coffee cake recipe.
Erik loves breakfast AND he loves desserts so, cake for breakfast is right up his alley.
And I don't mind it either. 😉
You will need
1 Cup of Vegetable Oil
2 Eggs, Beaten
1 Teaspoon of Vanilla
1 Cup of Milk
1 Cup of Sugar
3 Cups of Flour
3 Teaspoons of Baking Powder
1/2 A Teaspoon of Salt
1 and 1/2 Cups of Brown Sugar
2 Teaspoons of Cinnamon
Preheat oven to 350o.
In a large mixing bowl, mix the oil, eggs, vanilla, and milk until well combined.
In a medium bowl, whisk the sugar, flour, baking powder, and salt until just combined.
Add the dry mixture to the wet mixture in thirds, mixing until smooth.
Prepare the streusel.
In a medium bowl, mix the brown sugar and cinnamon until well combined.
Lightly grease a 9x13 pan.
Pour half of the batter into the prepared pan and spread evenly.
Sprinkle half of the streusel on top of the batter.
Top the streusel with the remaining batter, spreading carefully as to not disrupt the streusel layer underneath.
Top the second batter layer with the remaining streusel.
Drizzle the melted butter over the top.
Bake for 25 - 30 minutes or until the edges are brown and a toothpick inserted into the middle comes out clean.
Serve.
Enjoy warm!
