Harry Potter Treacle Tart + A Giveaway!

Hello everyone!
It's September 1st!
If you are a Harry Potter freak like me, you know that means it's back to Hogwarts day!
September 1st is the day you catch the Hogwarts Express and head to school for the start of the year.
In honor of the big day, we decided to try out our first recipe from our Harry Potter cookbook.
We felt it was appropriate to make Harry's favorite dessert so, treacle tart it was!
Just a heads up the crust dough needs a few hours to chill...


You will need:
2 and 1/2 Cups of Flour
1 Cup of Powdered Sugar
1/2 a Teaspoon of Salt
2 Sticks of Cold Butter, Cut Into Cubes
2 Egg Yolks
1/3 Cup of Heavy Cream
1 Teaspoon of Vanilla


For the Filling:
1 Cup of Golden Syrup, Light Molasses or Corn Syrup, I used Molasses
2 and 1/4 Cups Fresh Bread Crumbs
Grated Zest and Juice of 1 Lemon


For the Egg Wash:
1 Egg Beaten
1 Tablespoon of Water


Place the flour, powdered sugar, and salt in a food processor and pulse to combine.
Scatter cubes of butter over the flour mixture.
Pulse until the mixture resembles coarse yellow meal without any white powdery bits remaining.
Transfer the mixture to a large mixing bowl.
Set aside.
In a medium mixing bowl, beat the egg yolks, cream and vanilla.
Add to the flour mixture.
Toss with a spatula until the dough clumps together.
If the dough is dry, add 1 more tablespoon heavy cream.
It's better to be too wet than too dry.
Divide the dough in half, form into disks, wrap in plastic wrap and chill in the refrigerator at least 2 hours.


Just before you are ready to roll out the dough prepare the filling.
Warm the molasses in a saucepan until it is runny.
Mix the molasses, bread crumbs, lemon zest and lemon juice in a mixing bowl until well combined.


Preheat oven to 400o.
Remove the dough from the refrigerator.
On a well-floured surface, roll one disk to an 11-inch circle.
Fold into quarters, brush off the excess flour with a pastry brush after each fold, then unfold into a 9-inch tart pan easing the sides gently into the pan and pressing the dough into the fluted edges.
Trim the dough even with the rim.
Roll out the second disk to 1/8th of an inch thick.
Cut the dough into long strips for the lattice topping.


Scrape the filling into the prepared crust and smooth the top with a rubber spatula.
Lay half of the strips of dough over the filling in one direction, and the other half in the opposite direction to form a lattice.
Trim the overhang.
Beat the egg and water in a small bowl to create your egg wash.
Gently brush over the lattice.


Bake for 10 minutes, then reduce temperature to 375o and bake for another 25 minutes until the crust is browned and the filling puffs up in the center.
Serve warm with custard, vanilla ice cream or whipped cream if desired.
Enjoy!


We had never had treacle tart before and were not disappointed!
It is delicious and VERY sweet!
We plan on eating some tonight while watching the first Harry Potter and putting together a Harry Potter Lego.
Did I mention I was a Harry Potter freak?

The Leading Ladies In My Life + A Golden Giveaway!

Hello everyone!
As you probably know International Women's day was last Friday.
I love International Women's Day and the chance it gives us to celebrate one another.
I feel that we are at such an exciting age for women.
We are finally getting recognition for all we have done and we get to do some pretty amazing things because of it.


Growing up I never felt like being a girl was a disadvantage.
Not because I was told or shown differently, but because I had so many amazing women showing me that was untrue. 
My three older sisters, my mom, my grandmothers, my aunts, my teachers.
I am so grateful for the women who paved the way and fought for our rights.
And I am so grateful to have the opportunity to fight for a brighter future for the little ladies in my life.
My nieces hold such a special place in my heart.
Don't get me wrong, I love my nephews.
My nieces are just interested in things I can relate to.
Music, photography, fashion.
While my nephews favorites pass time is pretending to urinate on me...


My niece Stella is the gentlest, purest soul I have ever had the pleasure of meeting.
She is so sweet she gives me a toothache.
For Christmas last year she asked Santa for a "real life violin "
What six year old has an interest in the violin?!
I know I didn't...
She loves to bake and create new foods. 
She wants to own her own bakery when she grows up.
She found out that I also love to bake and asked to come over and bake at my house.
On a Saturday night all she wanted to do was bake with me.
It made me so happy!


My niece Baylee loves life more than anyone I have ever known.
She loves to celebrate and is always looking forward to the next event.
She likes YouTube and is interested in videography and filmography.
Santa brought her a Polaroid camera and she takes better pictures at six than I do now...
She has always had an interest in becoming a doctor.
I recently asked her what kind of doctor she wants to be.
She said a baby doctor.
I asked "So you are going to take care of the babies?"
Her response.
"Nope. I'm going to bring them into the world."
Mic drop!


My niece Bella is eighteen months old and can only say a few words but, she is the most independent and feisty little thing.
She knows what she wants and I would advise you not to go against her wishes.
She is persistent and will do what it takes to get it. 
I think she will be a little fashionista.
She loves to spend the day trying on clothes.
She will bring me outfit after outfit to put on.
She loves to wear items from her big sister's closet and always makes sure to accessorize.
She also loves my phone.


I am completely inspired by my nieces.
I love how creative they are and that they dream big.
My goal in life is to encourage them to be whatever they want to be.
To try new things and explore all their opportunities.
I truly believe that they will change the world.

My Valentine + Another Giveaway!

Hello everyone!
Last week was a long one for me.
It started with a mom hunting me down in a store on Monday and screaming at me for not accepting her son's apology after he ran into me, I hope you know me well enough to know that is not true, and ended with me waking up to an earthquake on Friday morning.
Halfway through the week I was feeling pretty overwhelmed.
I have mentioned previously that I have anxiety but I don't think I have mentioned that it keeps me from sleeping.
A get a few hours a night if I am lucky.
Wednesday evening I was feeling really down and facing a night of no sleep was something I was not looking forward to. 
Erik could tell something was wrong, so he asked what was bothering me.
I told him what was on my mind and he immediately leapt into action.
He got me my night time necessities, a nice cold glass of water and my heating pad.
He gave me a foot rub, stayed awake and talked with me until way past his bedtime.
We were laying in bed talking and I watched as the clock ticked past midnight turning into Valentine's Day and thought how lucky I was that he was my valentine.
I knew that Erik would give me an amazing Valentine's Day in a few hours but it couldn't compare to that moment.
Roses and chocolate are amazing gifts but, having him take care of my needs meant so much more.


I am so grateful for Erik and his patience.
He is an amazing man and I am very lucky that I was able to snatch him up.
If I could give you one piece of advice, it would be to marry someone like him.
I hope you all had an amazing Valentine's Day.

Goodbye Christmas + My First Giveaway!

Hello everyone!
Does anyone still have their Christmas decorations up?
I finally bit the bullet this weekend and took ours down.
It's seriously one of my least favorite days of the year.
It's like a bad break up.
Christmas just decides to leave me and I am taken by surprise. 
I thought we meant something to each other.
I thought we had something special.
Time passes and it gets easier.
My friends and family tell me it's time to move on but it's too soon.
Then one day, I wake up and I have accepted that it's over and it's time to move forward without Christmas.
All of it's stuff gets put into boxes.
And what's this?
Someone new to share my life with?
Valentine's Day, you say?


I have mentioned before that January is not my favorite month.
Christmas breaking up with me every year really doesn't help...
But, something that does help is my first ever giveaway!
I love to give people gifts so, giveaways have always been something that interested me.
I am proud to say we are finally doing it!
My hope is to do one giveaway each month this year.
This month I am giving away a bando planner on my Instagram.


This planner is straight out of my dreams.
It is filled with beautiful artwork, motivational quotes, stickers and even coloring pages!
I am determined to make this a great year and now that I have this planner I know it will be.
